Pav bhaji is a popular street food dish from India. Here's a recipe to make it:
Ingredients:
- 4 medium-sized potatoes, peeled and chopped into small pieces
- 1 cup cauliflower florets
- 1 cup green peas
- 1 cup chopped onions
- 1 cup chopped tomatoes
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 2 green chilies, finely chopped (optional)
- 1 tbsp pav bhaji masala
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- Salt to taste
- 2 tbsp butter
- 4-6 pav (buns)
- 2 tbsp chopped cilantro leaves for garnishing
- Lemon wedges for serving
Instructions:
In a pressure cooker, add chopped potatoes, cauliflower florets, and green peas. Add enough water to cover the vegetables and pressure cook for 3-4 whistles or until the vegetables are soft and mushy.
Meanwhile, in a separate pan, heat butter and add chopped onions. Saute until the onions turn translucent.
Add minced garlic and ginger, and saute for 1-2 minutes until the raw smell disappears.
Add chopped tomatoes and green chilies (if using). Cook until the tomatoes become soft and mushy.
Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
Once the pressure from the cooker releases, mash the cooked vegetables using a potato masher until they are smooth and free of lumps.
Add the mashed vegetables to the pan with the masala and mix well. Add a little water if the mixture is too dry.
Cook the mixture on medium heat for 5-6 minutes, stirring occasionally. Adjust the salt and spice levels as per your preference.
To serve, heat pav buns on a griddle or tawa until they are slightly toasted. Serve the hot pav bhaji with a dollop of butter on top, chopped cilantro leaves, and lemon wedges on the side.
